Blumenkäse is crafted in the Rhine valley in St. Gallen using a traditional recipe. The cow's milk used to make it comes exclusively from farms in the region that respect animal welfare. Cultures, rennet and salt are added, and then the cheese is aged for 6 months.
After the 6 month aging period, the resulting cheese has a delicate and slightly acidic aroma. Its flavor is mild, yet subtly tart with the flavor of herbs. This flowering beauty is available in 15-pound wheels and 6-ounce portions. Pair Blumenkäse with Chardonnay, Pinot Noir, or a sparkling wine.
