Ingredients

for 4 servings


POTATOES:

  • 1 30 oz bag of frozen tater tots

DRESSING:

  • 1 cup yogurt

  • ½ cup mayonnaise

  • 1 lemon, juiced

  • 2 garlic cloves, minced

SALAD:

  • 1 cucumber, diced

  • 1 celery rib, small-diced

  • 4 radishes, thinly sliced

  • 1 tablespoon chopped parsley

  • ¼ cup chopped dill

  • 1 red onion, finely sliced

  • 1 tablespoon chopped green onions


Directions

  1. Cook tater tots according to the instructions on the packaging.

  2. Meanwhile, make the dressing: In a large bowl, whisk together the yogurt, mayonnaise, garlic and lemon juice until well combined.

  3. Make the salad: Add the tots, cucumber, celery, radishes, parsley, dill and red onions to the dressing and mix well.

  4. Gently fold everything to mix well. Garnish with green onions.
