VSOC - Very Superior Old Cheese
It is not without reason this cheese is named Very Superior Old Cheese. The world's most prestigious competition: The World Cheese Awards have praised them for their very superior taste. VSCO leaves their Gouda cheeses on wooden shelves to ripen. The extra time and care VSOC cheese gets results in a beautiful crumbly texture, a deep yellow/orange color, and a fine structure of salt crystals. Naturally matured for at least 2 years, this cheese retains a creamy texture and an excellent taste with hints of roasted nuts and caramel.
