Jasper Hill Farm's newest cheese, Sherry Gray, is a double-cream, ash-ripened medallion made with grass-fed cows' milk and cream. Sherry Gray cheese honors the memory of a treasured member of the Jasper Hill Farm community who modeled humanity and inspired commitment! Jasper Hill is a working dairy farm with an on-site creamery in the Northeast Kingdom of Vermont.
Sherry was a humble man, he settled into an ascetic life in a sod hut on Barr Hill in the 1970's, trading in the urban life. He was considered a model citizen who boosted the community and inspired generations as a substitute teacher and mentor to many.
The ash coating on this unique cheese serves a purpose beyond aesthetics; it plays part in tempering the fresh wheels' surface ph and fosters the development of a thin, even bloom of flora. The extra cream and long culturing time creates a whipped texture that coats the palate in buttery richness.
The result of all of this detailed ripening is an indulgent, one-of-a-kind cheese! Sherry Gray is very pleasing upon first glance with its soft and silvery rind as the black ash peeks through a frosty layer of delicate bloom. As you cut into the wheel, there is a soft and buttery texture. Flavors of cultured cream dominate, with subtle hints of fresh button mushrooms and a lingering nutty finish.
This decadent cheese pairs deliciously with bubbles or a simple cup of herbal tea.
