Company Spotlight: Fromagerie Guilloteau

The name of the signature brand Fromager d'Affinois is a play on words between the Dauphine region where the dairy is located and the last cheese making stage: the affinage. Located in the Rhone-Alpes region in the French countryside, the dairy has been turning out incredible cheeses since 1981. Jean-Claude Guilloteau, the founder and former engineer, came up with a unique process to produce delicious cheeses in the traditional style but even smoother and with a delicate, thin rind that has gained worldwide admiration!


Fromagerie Guilloteau has many products

including cheeses made from cow's, goat's, and sheep's milk, extra creamy and reduced fat, there really is something to suit every taste! Take a look at their website to explore the rich flavors of France. I discovered they have a recipe page where you can specify the cheese you'd like to incorporate and the type of meal, whether it be breakfast or dessert, full of tasteful and delicious ingredients! Super intriguing for those who are excited to get creative in the kitchen!


Their current product of the month is their classic Fromager d'Affinois Le Fromager, a generous, melt in the mouth cheese. Made with cow's milk, the rich and creamy soft texture releases a fresh and fine taste with a delicate flavor. A luscious, Brie-like cheese that is unique in the world of double cremes, as it progresses in age it still maintains a frim paste in the center. Le Fromager is one of our favorites at Curd is the Word! We love the mild yet nuanced flavor and super creamy, spreadable texture. Slather it on a cracker (rind and all) and top with truffle-infused honey for a decadent treat that will knock your socks off.

Unlike Brie, this double cream soft cheese is made using a special production process

called 'ultrafiltration.' This process breaks down the fat molecules and removes water from the pasteurized cow's milk. This concentrates all of the other components allowing for a faster cheesemaking process, a more luscious texture, and a higher protein and calcium content! Underneath the light rind is a gooey ring that becomes almost liquid at room temp. As you progress further into this beautiful cheese, there is a rich taste of fresh butter and earthy mushrooms.


The Fromager d’Affinois brand offers a wide range of flavors such as truffle, red pepper, and garlic and herb. In addition to the Fromager d'Affinois line, Fromagerie Guilloteau produces the Saint Angel line of cheeses. Saint Angel cow's milk triple cream cheeses have an incredibly smooth texture and buttery flavors. For those craving an even creamier taste than Fromager d'Affinois (we didn't even know that was possible!), Saint Angel cheeses are the perfect match. In addition to the original, Guilloteau also makes a Saint Angel Blue cheese that features mild blue veining.


Whether you are new to the world of bloomy rinds or a seasoned cheese connoisseur, Fromagerie Guilloteau cheeses are sure to please any palate.
