For the Pumpkin Bars
4 large eggs
1 cup granulated sugar
3⁄4 cup brown sugar
1 cup vegetable oil
1 (15 ounce) can pumpkin purée (pumpkin pie filling)
1 teaspoon vanilla
2 cups (240g) all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
3⁄4 teaspoon salt
For the Cream Cheese Frosting
1 (8 ounce) block cream cheese, softened
1⁄2 cup unsalted butter, softened
2 teaspoons vanilla extract
2-3 cups powdered sugar
Instructions
Preheat the oven to 350 degrees Fahrenheit (175°C). Grease and line a 9×13-inch baking dish with parchment paper. Set aside.
Make the cake: In a large mixing bowl, whisk the eggs, sugars, oil, pumpkin puree, and vanilla until smooth and lump-free.
In a separate bowl, whisk the flour, baking powder, cinnamon, baking soda, and salt until well blended. Add to the wet ingredients and mix gently by hand until just combined.
