Cucumber Cooler Recipe

Ingredients
1 1/2 lb. cucumbers, cut into 1-in. pieces (about 3 large [8 oz.] cucumbers)
1/2 cup tap water
2 Tbsp. fresh lemon juice (from 1 large lemon)
2 Tbsp. simple syrup
3 Tbsp. (1 1/2 oz.) gin, tequila, or vodka (optional)
Ice
Sparkling water
Fresh mint or fresh basil
Directions
Process cucumbers and water in a blender until very smooth, about 2 minutes. Pour through a fine mesh strainer into a medium bowl or 3-cup container; discard solids.
Stir together 1/2 cup of the cucumber juice, lemon juice, simple syrup, and gin, as desired, in a Collins glass. Add ice, and top with sparkling water. Garnish with fresh mint. (Reserve remaining cucumber juice for another use or store in an airtight container in freezer up to 6 months. Thaw completely before using.)
