Hot Honey Blueberry Brie Grilled Cheese
For the blueberry compote
1 1/4 cups fresh blueberries
1 lemon zested
1 lemon juiced
1-2 tbsp honey depending on how sweet your berries are
pinch of flaky sea salt
For the grilled cheese
2 slices thick sourdough bread
2 tbsp softened butter
2-3 tbsp blueberry compote sauce
Fresh blueberries
Thinly sliced brie cheese to cover the bread
Basil leaves
Hot honey
Balsamic glaze
Flaky sea salt
Instructions
Add all the ingredients for the blueberry compote to a saucepot & let it come to a boil.
Once boiling turn down to a simmer & let thicken stirring occasionally so you don’t burn the blueberries.
Butter both sides of the bread & turn over to spread a layer of the blueberry compote to both sides. You can also use your favorite blueberry jam if desired but the compote is next level!
Add slices of brie to both slides of the bread then press in a handful of fresh blueberries, basil leaves, drizzle of hot honey, balsamic glaze & flaky sea salt.
Press both sides of bread together & cook on a pan on medium heat until both sides are golden about 2-3 minutes each.
You can also transfer the grilled cheese to the oven at 350 degrees for about 5 minutes to achieve even more crispness. Drizzle with more hot honey & flaky sea salt.
