Ingredients

  • 2 tablespoons olive oil

  • 2 tablespoons white balsamic vinegar

  • 1 tablespoon maple syrup

  • 1 teaspoon Dijon mustard

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 4 thinly sliced radishes of different colors (e.g. watermelon, purple daikon, and beauty heart varieties)

  • 4 mandarin oranges, peeled and separated into sections

  • ½ cup baby arugula

  • ¼ cup crumbled feta cheese

  • ¼ cup toasted pepitas


Directions

  1. In a small bowl whisk together the olive oil, balsamic vinegar, maple syrup, Dijon, salt, and pepper.

2. Combine the watermelon radishes with the mandarins, arugula, feta cheese, and pepitas.

Toss with dressing and serve immediately.
