Why Does Halloumi Cheese Squeak? Here’s the Real Reason

Some folks find it oddly satisfying, while others can’t help but cringe. But here’s the thing: there’s a scientific reason behind why halloumi makes that unique sound, and it’s actually pretty cool.

The stars of the squeak show? Casein (a type of protein found in cheese) and calcium. When halloumi is made, these two elements bond together tightly during the cheese-making process. The result is a cheese that holds onto its structural integrity, creating a firm, squeaky texture when you bite into it.


Halloumi is a "young" cheese, meaning the proteins haven’t had time to break down or soften. As you sink your teeth into it, the friction between the casein and your tooth enamel creates that signature squeak. In addition, halloumi’s high pH (low acidity) means there’s not enough acid in the cheese to break down the calcium bonds. This gives the calcium a chance to stay in place, making those protein bonds as strong as ever.


It’s this “power couple” of protein and calcium that gives halloumi its iconic squeak. And the fresher the cheese, the squeakier it’ll be! As halloumi matures over time, enzymes start breaking down the proteins and calcium, which softens the structure—and the squeak fades away.

Need Your Halloumi to Squeak Again?

If you’re missing that satisfying squeak in your halloumi, don’t worry—there’s a quick fix. Pop your cheese in the microwave for a couple of seconds, and it’ll tighten up those proteins, bringing the squeak back… for a little while, anyway. But don’t go overboard! If you heat it too long, you risk melting the cheese, which does the same thing as the enzymes: it breaks down the structure, and the squeak is gone.


For long-lasting squeakiness, keep your halloumi in cool temperatures. You can even freeze it for your next cookout—this will help maintain its rigid structure so it can squeak to its heart’s content.
