Let’s be honest—breakfast is the one meal that comes with the most unnecessary rules. We’ve been conditioned to think that mornings must start with eggs, toast, and maybe a side of bacon or fruit. But why? Who decided that pancakes are okay at 8 a.m., but a bowl of stir-fry is “too much”?
And if you’ve been paying attention, eggs aren’t exactly the easiest thing to come by right now. The ongoing avian flu outbreak has made them scarce and expensive, sparking an explosion of egg substitutes and breakfast alternatives. But why was I so focused on staying in the “breakfast food” lane?

Many cultures around the world start the day with meals that are savory, complex, and far from the sugary cereals and bagels that dominate Western breakfast culture. In Japan, breakfast might mean a piece of soy-glazed salmon with miso soup. In Vietnam, it’s a steaming bowl of pho. And in Mexico, chilaquiles—a delicious mix of fried tortillas, salsa, and cheese—are a breakfast staple.
So why limit ourselves? Why not embrace the idea that any food can be breakfast food?
