Cheese of the Week: Milton Creamery Flory's Truckle

Nutty, aged raw milk cloth-bound cheddar.

This award-winning cheese is made by Milton Creamery in conjunction with the Flory Family of Jamesport, Missouri. In Jamesport, the Flory family uses raw milk from their Jersey cows to craft these truckles. The cheese is wrapped in cheese cloth and aged for 60 days. The cheese cloth left on during aging allows the cheese to breathe, resulting in a crumbly, crystalline texture. The cheese is then left to age at the Flory's farm for 60 days. After the first ten days, the truckles are rubbed with lard which slows moisture loss and allows a rind to develop. After 60 days, the truckles are sent to Milton Creamery in Iowa where they mature for 12 additional months.

The result is a nutty, crumbly cheddar with a grassy, slightly-sweet flavor and a crunch thanks to the protein crystals throughout. It has very light fruity notes and a sharp taste typical of aged cheddars. According to Milton Creamery, Flory's Truckle is "a must-have on any cheese board as it has the perfect balance of sweet, salt and tart that keeps you coming back for another bite."


Flory's Truckle has won several American Cheese Society Contest Awards, including 1st place in the Cloth-wrapped Cheddar category in 2016.


"Milton Creamery is the result of a dream built in Southern Iowa – a place with rolling hills, woodlands, rivers and rich soil..." Owners Rufus and Jane Musser moved to Milton, Iowa from Pennsylvania in 1992. They milked cows and farmed 170 acres, but wanted a change and to be more involved with people, so off to Iowa they went.


In 2000, after a cheese-making conference, Rufus decided he wanted to become a specialty cheese maker. From that day, they spent years building the business from the ground up and on May 8, 2006, Milton Creamery made its first batch of cheese. In 2020, they expanded with the addition of a new 17,000 square foot facility.


Today, Milton Creamery has a highly decorated line of specialty cheeses. All the milk used to make Milton Creamery cheeses comes from from traditional Amish farms located within a 30 mile radius of the creamery.
