Whipped Goat Cheese

Prep/ Total Time: 10 Minutes (does not include chill time)
Serves: 11 servings
Ingredients:
16 ounces goat cheese (plain), softened to room temperature
¾ cup whipped cream cheese, softened to room temperature
1 ½ teaspoons finely minced chives, plus extra for garnish
1 ½ teaspoons finely minced tarragon, plus extra for garnish
1 ½ teaspoons finely minced parsley, plus extra for garnish
¾ teaspoon thyme leaves, plus extra for garnish
Salt
Freshly cracked black pepper
Crackers and/or veggies, to accompany
Preparation:
Begin by gathering and prepping all of your ingredients according to the ingredient list above to have ready and organized for use.
Add the room temp goat cheese and whipped cream cheese to the bowl of a food processor, and process for about 2 to 3 minutes, or until light, fluffy, and well-blended.
Using a small rubber spatula, spoon the cheese mixture into a large bowl, and sprinkle in the 1 ½ teaspoons each of minced chives, tarragon and parsley, plus the thyme leaves, and fold together to thoroughly combine. Add a couple of good pinches of salt and cracked black pepper, to taste.
Serve immediately, or if making ahead, cover the whipped goat cheese with plastic wrap, and chill.
Remove the whipped goat cheese from the fridge about 30 minutes to 1 hour before you're ready to serve it (longer if your kitchen is cold), to allow for it to come to room temp. Then, using a spoon, gently stir and re-whip it to soften it up a bit, and spoon it onto a platter or into a serving bowl.
Top with a bit of extra chives, thyme, tarragon, and/or parsley, and serve with crackers and/or veggies.
